Job Function:
A leading member of the Triple fff Brewery brewery team, to jointly manage production of finished existing recipes whilst maintaining the highest possible high-quality standards. We have both a 50BBL brew kit and a 5BBL one and pride ourselves in being innovative thus there is scope to help create new recipes. We are a small team and this is a hands-on role. |
Main responsibilities:
Production Management:
- To brew amazing beer
- To maintain and continuously improve quality and production standards
- To work to HACCP, towards gaining SALSA standards, maintaining proper records, routine product testing, maintenance schedules
- To work to the sales team forecasts and ensure products are available to an agreed schedule
- To maximise stock management, deliveries, and implement improvement to systems to increase efficiency
- To ensure the brewhouse is adequately and efficiently staffed, and holiday time is organised with cover
- Maintain staff skills by helping to recruit, select, and train employees; develop personal growth opportunities
- To take part in weekly planning meetings
A Senior Brewer must be able to adopt a philosophy of continual improvement. Together with their team they will:
- Monitoring and ensuring compliance for all audits and working towards SALSA
- Maintain and review HACCP
- Aim for utmost consistency of recipes and products
Brewing:
- Work the brew schedule through the Brewman system
- Order raw materials
- Brewing
- Ensuring quality, health and safety measures are maintained and adhered to
- Cleaning – vessels, casks and the premises
- Maintenance – simple wiring, equipment repairs and scheduling contractor maintenance
- Working with brewers to plan brewing and bottling schedules
- Responsibility for stock-take and updating Brewman
- Developing new products
- Other tasks as required
H&S:
They must ensure the brewery is a safe place to work and they play a role in enforcing safety standards on the production line. The position will also perform safety audits and ensure that anyone visiting the brewery does so safely. Ensure the brewery is extremely clean and complies with food regulations. The brewery production manager will be very vigilant when it comes to workplace hygiene. They must ensure that all machinery is correctly maintained and sanitised after use, and:
- Maintain a safe working environment
- Enforce occupational health and safety standards
- Represent production on the H&S committee

Specific Experience Desirable
Knowledge:
- A General Certificate in Brewing / formal brewing qualifications would be looked on favourably but we are willing to fund a diploma in brewing for the right candidate
- A Bachelor’s degree in food production, chemistry, biology, business, engineering or business could be advantageous
- Knowledge of government regulatory programs and HACCP
- Working experience of brewing
- A demonstrated ability to drive improvement and innovation at a brewery
- Experience running a production line and implementing quality assurance schemes
- Proven ability to use best practice manufacturing techniques to improve a brewery
- Strong interest in real ales and beer
Desirable Skills:
- Excellent written and verbal communication skills
- IT skills – existing working knowledge with Brewery software
- Strong knowledge of brewing practices and different beers
- Strong understanding of process controls
- Planning and organisational skills
- Problem-solving and decision-making skills
- Strong work ethic and the ability to multi-task
- Attention to detail and accuracy
